Preheat your oven to 400 degrees Fahrenheit.
Mix your ground beef with 2 minced cloves of garlic, 1/4 minced red onion, salt, pepper, and paprika.
Place the ground beef mixture on parchment paper or foil. Place another piece of paper or foil on top and roll it out with a rolling pin until even. Take off the top sheet and roll the meat up into a cylinder.
Place your rolled meat into a baking dish. Add in your cherry tomatoes and sliced bell pepper. Drizzle a little olive oil on top.
Put the dish in the oven to bake for 30-45 minutes.
While the meat cooks, make pickled onions by bringing the water, vinegar, and 1 tbsp honey to a boil, then pouring it over the sliced 1 red onion. Once cooled, add 1/4 cup chopped parsley.
Prepare the chili garlic yogurt sauce. Combine the Greek yogurt, dill, 1 tbsp parsley, 2 minced cloves of garlic, chili oil crunch, 1 tbsp honey, 1 tsp olive oil, salt, and pepper until thick.
Prepare your cucumbers by dicing them up.
Once the baking dish is done, remove from oven. Unroll the cooked meat and break it up into rough pieces.
Assemble your bowl with cooked turmeric basmati rice, the broken-up beef, cherry tomatoes, bell pepper, cucumbers, and pickled onions. Top with the chili garlic yogurt sauce and crumble feta cheese over everything.
