Slice the beef and marinate with baking powder, a splash of soy sauce, 1 tablespoon of oil, and 1 grated garlic clove.
Chop the carrots, zucchini, and yellow onion.
Mix the oyster sauce, the remaining Japanese soy sauce, and sugar in a small bowl to make the sauce.
Heat a wok or large pan with oil. Fry the marinated beef on high heat until it browns and forms a nice crust. Remove from the pan and set aside.
In the same pan, fry the carrots, zucchini, and yellow onion until they soften but retain some crispness.
Fold in the remaining grated garlic clove and the bamboo shoots, and stir-fry together for 1-2 minutes.
Return the beef to the wok. Pour in the prepared sauce and stir-fry everything together for another 1-2 minutes.
Serve immediately with rice.
