Marinate the beef: Combine the beef with 1 tbsp oyster sauce, 2 tsp dark soy sauce, baking soda, cornstarch, and white pepper. Set aside for at least 15 minutes. Meanwhile, mix all remaining sauce ingredients (2 tbsp oyster sauce, soy sauce, 1 tbsp dark soy sauce, Shaoxing wine, coconut sugar, sesame oil, Chinese 5 spice, and water) together in a bowl.
Blanch the broccoli: Cover the broccoli with boiling water and leave for 1–2 minutes, then drain well.
Cook the beef: Heat a little oil in a wok or large pan over high heat. Add the marinated beef in a single layer and stir-fry for 2–3 minutes until browned. Remove and set aside.
Fry the rice: Add the remaining oil over high heat, then stir-fry the garlic, ginger, and spring onion whites for 1 minute. Add the rice, break it up and stir-fry for 1–2 minutes until hot and slightly toasted. Add the broccoli and the mixed sauce, then stir-fry for another 1–2 minutes until well coated.
Finish: Add the beef back to the pan and toss until heated through. Stir through the spring onion greens, then serve hot. Top with a fried egg, chilli oil, and sesame seeds.
Cook it hands-free.
