Clean the octopuses thoroughly and remove the beak.
Grab a large pot, add the octopuses, and pour in just enough water to cover them.
Add some aromatics to the pot, such as a piece of onion and lemon, if desired.
Turn on the heat and bring the water up to a simmer.
Drop the heat to low, cover the pot, and let it cook low and slow for 45 minutes to an hour. You know it is ready when it is easily pierced with a knife.
Turn the heat off and let the octopus cool completely in its own cooking liquid.
Once cooled, cut it up to serve as is in a fresh octopus salad, or throw it on the grill to char up the legs.
