Place the peeled garlic cloves into a small, oven-safe dish and pour the olive oil over them. Cover the dish and bake in the oven at 350°F for 30 minutes until the garlic is soft and golden brown.
Remove the roasted garlic cloves from the oil (you can save the infused oil for other uses) and mash them into a paste in a bowl.
Add the softened butter, salt, black pepper, red pepper flakes, brown sugar, and 3 tablespoons of the parmesan cheese to the mashed garlic. Mix thoroughly.
Stir in the chopped parsley.
Cut the French bread in half lengthwise and spread the garlic butter paste evenly over the cut surfaces.
Top the bread with the remaining parmesan cheese and an even layer of shredded mozzarella.
Bake the prepared bread in the oven at 400°F for 12 minutes, or until the cheese is melted, bubbly, and slightly browned.
Remove from the oven, immediately drizzle with honey, slice, and serve hot.
