In a bowl, combine the low-fat quark, spelt flour, baking powder, sweetener of choice, chocolate drops, and a pinch of salt. Mix all ingredients well until combined.
Remove the mixture from the bowl and knead the dough thoroughly on a work surface.
Sprinkle the dough with a little flour and roll it out into a large square.
Cut the dough into smaller squares, and then cut each square diagonally into triangles.
Roll up all the triangles from the wide end to the tip to form croissant shapes.
Place the croissants on a baking sheet lined with parchment paper and bake in the oven at 180°C (350°F) for 20 to 23 minutes.
