Halve the feta blocks. Prepare a breading station and coat each piece of feta first in flour, then dip in the beaten egg, and finally press into the sesame seeds to coat completely.
Heat the frying oil in a pan over medium heat. Fry the sesame-coated feta until golden brown and crispy on all sides. Remove from the pan and set aside.
Cut the tomatoes into small pieces. Heat the olive oil in a pan and fry the tomatoes until they become soft.
Season the cooked tomatoes with maple syrup, salt, and pepper. Remove from heat and stir in the chopped parsley and fresh basil.
To serve, place a bed of arugula in a bowl. Top with the warm tomatoes and place the fried feta on top. Garnish with chili flakes and a drizzle of honey or additional maple syrup.
