Slice the potatoes, making sure not to cut all the way through (use chopsticks or straws as a guide). Rub with olive oil and cook in the Airfryer at 200°C for 20 minutes.
Pat the beef filet dry. Sear sharply on both sides with a little olive oil for 2 minutes per side, then sear the edges for about 50 seconds per side.
Turn down the heat, add a generous amount of butter and 2 garlic cloves to the pan. Baste the meat repeatedly with the melted butter for about 7-10 minutes, depending on your preferred level of doneness.
Meanwhile, boil the edamame, chop the cucumbers and cherry tomatoes, and mix the Skyr with the herb quark seasoning.
Once the potatoes and meat are ready, season everything with salt and pepper, arrange on a plate, and enjoy.
