Preheat a pan to high heat. Dice the onion and add it to the pan. Once it begins to soften, add the ground beef along with the garlic powder, onion powder, Cajun seasoning, salt, and pepper. Mash and cook until browned.
Prepare the sauce by mixing the Greek yogurt, sugar-free ketchup, mustard, vinegar, sugar-free relish, garlic powder, salt, and pepper in a bowl.
On an egg roll wrapper, place a cheese slice, a scoop of the cooked ground beef, and a drizzle of the sauce. Brush beaten egg wash on all 4 sides of the wrapper.
Roll up the wrapper tightly, making sure all edges are completely sealed. Repeat this process for all egg rolls.
Brush the tops of all the assembled egg rolls with the remaining egg wash.
Air fry at 400°F for around 12 minutes, or until golden and crispy.
