Crack two eggs into a bowl, add lukewarm or warm water (40ºC–60ºC), season with salt and chicken powder, and whisk until well combined.
Strain the mixture through a fine sieve into a microwave-safe bowl, and use a spoon to remove any bubbles from the surface.
Cover with a microwave-safe plate and microwave for 4–5 minutes at 50% power (400w). Check at 4 minutes to see if the mixture is mostly set.
If mostly set, let it sit, covered, for 2–3 minutes to finish cooking gently with the residual heat.
Uncover carefully to avoid steam, and top with soy sauce, chili oil, and scallions.
