Preheat the oven or Airfryer to 200°C (400°F). Cut the sweet potato into cubes, season with olive oil, smoked paprika, salt, and black pepper. Bake for 25 minutes in the oven, or 20 minutes if using an Airfryer, until lightly golden.
In a small bowl, prepare the sauce by mixing the honey, cayenne pepper, apple cider vinegar, grated garlic, a splash of olive oil, salt, and pepper. Set aside.
Cut the chicken breast into bite-sized pieces. Sauté in a pan over high heat for 6 minutes with a little olive oil, seasoning with salt and pepper.
Lower the heat, pour the hot honey sauce over the chicken, and stir well to coat. Let it caramelize for 2 minutes.
Assemble your plate: add the roasted sweet potatoes, the hot honey chicken, mashed or sliced avocado, and cottage cheese. Top with fresh parsley.
