In a small cup, combine the light mayonnaise, zero ketchup, mustard, garlic and onion powder, a pinch of salt, a pinch of black pepper, finely chopped pickles, and a dash of vinegar. Mix well to create the special burger sauce.
Shape the lean ground beef into a patty. Heat a non-stick skillet over medium heat, add the patty, and season the top with salt and black pepper. Do not press down on the meat while it cooks to keep it juicy.
Once the patty is mostly cooked and flipped, place the slice of light mozzarella cheese on top. Add a small splash of water to the pan and immediately cover it with a lid to steam and melt the cheese.
Assemble the burger by spreading the special sauce on the bottom half of the bun. Top with the cooked patty and melted cheese, finely chopped onion (which can be soaked in water beforehand to reduce its bite), and shredded iceberg lettuce. Finish with the top half of the bun.
