Peel, dice, and remove the woody centre from the cassava, then boil in salted water for 15-20 minutes or until soft.
Drain and allow to cool. Mash with a fork until smooth and you feel resistance. Knead for 5-10 minutes, then cover and rest the dough for 30 minutes.
Mix the soy sauce, sesame oil, rice vinegar, chilli oil, and vegetable stock together to create the sauce.
Take small balls of the cassava dough, shape them using a bottle top, and boil them for 1-2 minutes or until they all float to the surface.
Drain the dumplings gently and quickly, then mix with the sauce. Top with sesame seeds and chives, and enjoy!
