Cut the crusts off the bread slices. Finely chop the crusts to make fresh breadcrumbs and place them in a shallow dish.
Use a rolling pin to flatten the crustless bread slices.
Crack the egg into a bowl and whisk well.
Brush a little beaten egg along one edge of each flattened bread slice. Place a cheese slice on the bread and roll it up tightly, using the egg wash to seal the edge.
Dip each roll into the remaining beaten egg, then coat thoroughly in the fresh breadcrumbs.
Deep fry the breaded rolls in hot cooking oil until golden brown and crispy. Remove from the oil and let drain before serving.
