Peel and slice the potatoes, then transfer them to a baking dish. Season with sweet paprika, garlic powder, rosemary, salt, and vegetable oil. Toss to coat evenly and bake in a preheated oven at 180°C (convection) for 10-15 minutes.
While the potatoes are in the oven, slice the pork into portions. Season both sides of the meat slices with salt and black pepper, then tenderize them using a meat mallet.
Slice the onions into thin half-rings.
Take the potatoes out of the oven. Layer the seasoned pork slices over the semi-cooked potatoes. Spread some mayonnaise over the meat, then distribute the sliced onions evenly on top. Drizzle the remaining mayonnaise over the onions. Return the dish to the 180°C oven for another 20 minutes.
Remove the baking dish from the oven and sprinkle an even layer of grated cheese over the top. Bake for a final 15-20 minutes at 180°C until the cheese is melted and golden.
