Peel and remove the cores from the green apples, then cut them into small chunks.
In a pot, combine the apple chunks, lemon juice, 2 tablespoons of granulated sugar, and 1/4 cup of water. Boil for 10 minutes until the apples are mushy and soft.
Blend the cooked apple mixture until it forms a smooth applesauce, then transfer it to the bowl of a stand mixer.
Bloom the gelatin in 1/2 cup of water. Melt it in the microwave, then mix the melted gelatin into the applesauce.
In a small saucepan, combine 1.5 cups of granulated sugar, 1/2 cup of water, and the corn syrup. Boil the mixture until it reaches 244°F.
Turn the stand mixer on high speed and carefully pour the hot syrup into the applesauce mixture. Whip for 10 minutes until the mixture is thick and fluffy.
Optionally, add a few drops of green food coloring and mix until combined.
Transfer the marshmallow mixture to a parchment-lined pan, spread it evenly, and let it sit at room temperature until fully set.
Dust a cutting board and the top of the marshmallow slab with powdered sugar to prevent sticking. Cut into large cubes and enjoy!
