Place a string cheese stick onto the softened rice paper. Fold the sides in and roll it up tightly to enclose the cheese.
Repeat the rolling process, then carefully thread four of the cheese rolls onto a flat wooden skewer. Repeat with the remaining rolls to make three skewers total.
In a small bowl, whisk together the gochujang, soy sauce, and honey to create the sweet and spicy glaze.
Heat cooking oil in a large pan over medium heat. Place the skewers in the pan and fry until the rice paper is lightly crispy and the cheese has melted inside.
Generously brush the cooked skewers with the gochujang glaze on all sides.
Garnish with black sesame seeds and serve immediately.
