Finely mince the garlic.
In a bowl, lightly mix the cornstarch and salt. Add the chicken thighs and coat them thoroughly on both sides.
Heat a pan with cooking oil. Add the chicken and cook until crispy on both sides, then remove from the heat and set aside.
In the same pan, add the minced garlic, soy sauce, honey, and water. Simmer until the sauce reaches your desired thickness.
Dip the cooked chicken back into the pan, making sure to coat both sides in the sauce.
Slice the chicken into thin strips and place on a fresh bowl of cooked rice. Optionally garnish with sesame seeds and serve with sliced cucumbers.
