Place the dried beans in a pot of water and bring to a boil. Change the boiling water 2-3 times. When the beans are halfway cooked, add one finely chopped onion to the pot, cover with a lid, and let it continue to simmer.
Meanwhile, slice the smoked meat into thick strips and brown them in a pan.
Remove the meat to a plate. In the same pan, sauté the remaining chopped onion. Stir in the tomato paste and smoked paprika, mixing well.
Once the beans are fully cooked and the liquid has reduced, pour the onion and tomato sauce into the pot.
Season the stew with salt, pepper, and dried thyme. Finally, add the browned smoked meat and finely chopped fresh lovage. Serve hot with warm bread and pickles.
Cook it hands-free.
