Mix the fresh yeast, sugar (or honey), and lukewarm water in a small bowl until the yeast is completely dissolved.
Add the yeast mixture and salt to the spelt flour in a large bowl. Mix everything together with a spoon or dough scraper until the flour is fully combined with the liquid.
Cover the bowl with a towel and let the dough rise in a warm place for about 60 minutes, or until doubled in size.
Preheat your oven to 240°C (top/bottom heat). Place an oven-safe bowl of water at the bottom of the oven to create steam, which helps make the baguettes crispy.
Transfer the dough to a floured surface and divide it into 6 equal pieces (or 2 larger ones). Shape them into mini baguettes and place them on a baguette baking pan.
Bake in the preheated oven for 20 to 25 minutes until golden brown.
