Slice the onion and cook in a pan over medium heat until soft and caramelized. Add a pinch of brown sugar towards the end to help with the caramelization.
In a bowl, mix together mayonnaise, ketchup, sweet relish, yellow mustard, and black pepper to create the burger sauce.
Spread garlic butter on the burger buns (inside and out) and toast them on a hot griddle or pan until golden brown.
Form the ground beef into meatballs. Place them onto a hot griddle, place a piece of parchment paper over each, and smash them flat. Season generously with salt.
Once the edges are crispy and browned, flip the patties. Immediately place a slice of American cheese on each patty and let it melt.
Assemble the burgers: spread burger sauce on the bottom bun, stack two cheesy smash patties, top with caramelized onions, add more sauce, and finish with the garlic bread top bun.
