Assemble the sandwiches by placing mozzarella slices between two pieces of white bread. Slice off the crusts to form a neat square.
Dredge each sandwich in flour, then dip into the beaten eggs, and finally coat in breadcrumbs. Press the breadcrumbs in firmly so they adhere to the sandwich.
To make the simple sauce, heat a little olive oil in a pan. Slice the garlic and sauté with red pepper flakes until fragrant. Add the tomato paste and tomato passata, season with salt and pepper, and let simmer.
In a separate pan, heat a layer of frying oil (or olive oil). Carefully fry the breaded sandwiches until golden brown and crispy on both sides.
Pour a little of the warm tomato sauce onto a plate, place the fried sandwich on top, and garnish with a fresh basil leaf.
Cook it hands-free.
