In a food processor, blend the walnuts, pitted plums, whole egg, and sugar until they form a fine paste.
Unroll the first sheet of puff pastry, spoon half of the walnut-plum paste onto it, and spread it out evenly. Repeat with the second sheet and the remaining paste.
Roll the pastry up tightly and cut the log into equal-sized pieces.
Place the pieces on a baking tray lined with parchment paper. Brush the tops with beaten egg yolk, place half a walnut on each piece, and press down gently.
Bake in a preheated oven at 160°C (320°F) for 30 minutes.
Remove the pastries from the oven, brush them with honey while they are still warm, and return them to the turned-off oven for 2-3 minutes.
Cook it hands-free.
