In a bowl, mix together the honey, mustard, a few drops of hot sauce, a pinch of salt, pepper, soy sauce, minced garlic, olive oil, and lemon juice to create the marinade.
Place the rack of pork ribs on a baking tray lined with aluminum foil. Season lightly with salt on both sides.
Brush the marinade generously over both sides of the ribs, reserving some for later. Wrap the ribs tightly in the aluminum foil.
Bake in a preheated oven at 180°C (350°F) for 1 hour.
Remove the ribs from the oven, carefully open the foil, and brush the top with the remaining marinade. Return to the oven for another 15 minutes to caramelize, repeating the process for the other side if desired.
Remove from the oven, slice into individual portions, and serve hot.
