Cut the block of Comté cheese into thick sticks and insert a wooden skewer into each one.
Blend the chicken or turkey breast in a food processor with salt and pepper.
Transfer the blended meat to a bowl. Add olive oil, one egg, and cornstarch. Mix everything well by hand.
Lay out a slice of turkey ham. Spread a small amount of the meat mixture on the ham to act as glue, place a cheese skewer on top, and tightly roll the ham around the cheese.
With wet hands, take a portion of the meat mixture and completely enclose the ham-wrapped cheese skewer. Repeat for all skewers and place them in the freezer for 20 minutes to firm up.
Prepare your breading station with three shallow dishes: one with flour, one with two beaten eggs, and one with crushed cornflakes mixed with smoked paprika and herbs.
Coat each firm skewer first in the flour, then dip it into the beaten egg, and finally roll it in the seasoned cornflake mixture until fully covered.
Heat a small amount of oil in a pan and fry the skewers over medium heat until they are golden brown on all sides and the chicken is cooked through.
