Heat a portion of the cooking oil in a skillet over medium heat. Add the diced onion and sauté until translucent.
Add the ground beef to the skillet. Break the meat apart with a spoon and cook until fully browned.
Stir the chipotle taco seasoning into the browned beef until the meat is evenly coated. Remove from heat.
Place a flour tortilla on a flat surface. Add a layer of shredded cheese to one half, top with a spoonful of the beef mixture, and cover with another layer of cheese. Fold the tortilla in half.
Heat the remaining cooking oil in a skillet over medium heat. Fry the folded tacos on both sides until the tortilla is golden and crispy, and the cheese is melted inside.
Gently open the crispy tacos and fill with pico de gallo and chipotle crema. Garnish with chopped fresh cilantro and serve with lime wedges.
