Slice the focaccia bread in half horizontally and remove some of the inside crumb. Spread butter on the cut sides and sprinkle with garlic powder and Italian herbs.
Place the bread in the oven to toast for 5 minutes.
In a pot over medium heat, cook the ground sausage until browned.
Pour most of the pasta sauce into the pot with the sausage, reserving a couple of spoonfuls for the sandwiches. Add the cooked pasta, stir to combine, and let simmer.
Remove the toasted bread from the oven. Layer ham and salami on the bread. Spread the reserved pasta sauce over the meat. Add dairy-free cheese to one half and regular cheese to the other half. Return to the oven until the cheese melts.
Slice the tomato. Take the sandwiches out of the oven and top with tomato slices. Season with salt and pepper.
Add shredded lettuce and pepperoncini. Close the sandwiches, slice them in half, and serve alongside the sausage pasta.
