Cook the pasta according to package instructions, or use leftover cooked pasta.
Heat olive oil in a pan, add the chopped onion and tomato paste, and sauté briefly.
Add a ladle of pasta water to the pan, season with salt and pepper, and stir well.
Pour in the heavy cream and stir in the grated Parmesan cheese. Let the sauce simmer slightly to thicken.
Transfer the cooked pasta directly into the sauce and toss until well coated.
Serve the pasta on plates, sprinkle with freshly chopped basil, and top with a whole burrata. Add an extra pinch of black pepper, tear the burrata open, and enjoy.
