Slice one banana into coins. Heat a pan with equal parts butter and brown sugar, and a pinch of salt to make caramel. Pour the caramel on top of a greased and parchment-lined loaf pan arranged with the sliced bananas.
For the batter, start by mashing two overripe bananas in a bowl.
Add eggs, yogurt, white sugar, cinnamon, nutmeg, salt, instant coffee, melted brown butter, and vanilla. Mix until combined.
Stir in the baking powder and chocolate chips.
Gradually add in the flour little by little until it forms a dough, then add milk to smooth the dough out into a batter. Pour the batter into the prepared loaf pan over the bananas.
Make a quick crunchy cinnamon streusel by mixing equal parts brown sugar, flour, and softened butter with salt and cinnamon. Mix until crumbly.
Spread the streusel evenly across the top of the batter.
Bake for 30-40 minutes until a toothpick inserted comes out clean. Let it cool before inverting and serving.
Cook it hands-free.
