In a large bowl, mix the lemon zest with 130g of sugar and rub them together with your fingers to release the aroma.
Add the melted butter, a splash of vanilla, eggs, lemon juice, flour, and baking powder. Incorporate all the ingredients with a spatula until you get a smooth and slightly sticky dough.
Cover the bowl with plastic wrap and refrigerate for 1 hour to make the dough easier to shape.
Form small balls from the dough. To make the process easier, coat your fingers with powdered sugar as the dough will be slightly sticky.
Roll each dough ball first in granulated sugar, and then generously in powdered sugar. Arrange them on a baking tray lined with parchment paper, leaving space between them.
Bake in a preheated oven at 180°C (350°F) for 8 to 10 minutes.
Cook it hands-free.
